The Paul Bricius artisan microbrewery was born with the aim of bringing to market a beer with a more refined and natural taste. The Paul Bricius beers, in fact, are born from raw materials grown directly by the company which therefore guarantees constant controls and the absence of mycotoxins.
The most harmonious, balanced and refined taste of our beers begins to take shape from the cultivation of our own distichous barley. To complete the journey towards a pure and refined taste, however, special non-standard production processes are also required, including the skimming of the product with which excess proteins are eliminated which would otherwise give the finished product a more ordinary taste. For this reason the master brewers of Paul Bricius have designed and built ad hoc systems such as the open tank boiler heated by direct flame, also known as the "open space" cooking vat.
The Paul Bricius processing method also ensures a much longer product life than the average of the craft beers on the market, without the addition of sulfites or preservatives but in a completely natural way.
