The Paul-Bricius & Co. brewery was founded in 2004 in Vittoria, from the passion of three friends who are passionate about the brewing world, starting to produce beer at home. Clashing against what was the nature and origins of their city, always known as the home of wine, they began to grow barley distich for the production of beer. The beer is brewed with a direct flame in a handcrafted plant, for the production are used top quality malts and hops; the beer is then stabilized, refermented and matured in the bottle, without undergoing any filtration and pasteurization treatment. The production process is long and laborious; at least 5 months pass from the moment the beer is produced to when it is placed on the market.
The Paul-Bricius & Co. brewery is managed by the three founding members, who since 2004 have been involved in the agriculture and the barley processing. The passion for the world of the beer was also transmitted to their sons.
