The Paul-Bricius & Co. brewery was founded in 2004 in Vittoria in the province of Ragusa, a town located in Sicily, in the extreme south of the island. The three friends Fabrizio Traina, Paolo Trainito and Luigi Carrubba, who share a passion for beer, spend their free time together, having fun, joking, drinking beer and studying the production process that, even if thousands of years old, still marvels today and enchants. The production plant consists of an infusion and boiling vat, a filtration tank, a fermentation tank and some silos for brewing beer; all the equipment used doesm't have any type of automation. The boiler, a open tank, is heated to "direct flame" and allows a different production process compared to the methods now abandoned by every modern brewery. The production phase is therefore characterized by hard and challenging moments that allow us to better express the talent and imagination of the brewmaster and consequently also the personality of our beers, with an original and perfectly traceable taste.
